No-Cook Sunday

It is just way to hot to do anything! So what better way to spend this Sunday evening than indoors, playing Super Mario World with Jake. We have gotten fairly proficient in finding the the first secret levels, keys to Star World and all of the blue, green, red and yellow switches.

My plan for dinner was to make Chicken Fajitas, but I have no desire to cook in this heat and have a very small appetite when it is SO hot outside. Luckily I have a husband who loves popcorn as much as I do and was totally okay with having a “popcorn” night.

Tonight we made Kettle Corn and popcorn with Bradley Street Cheese Sprinkle from Penzey’s.

As an wedding gift we got this microwave popcorn popper. I am now seeing it has very low ratings, but I will tell you that Jake and I have never had any issues with it! We find the popcorn much healthier for you than the microwave bags that have way too many ingredients for just wanting popcorn and butter.

Cheesy Popcorn

  • 1/3 cup oil
  • 1/2 cup popcorn kernels
  • 2 -4 tablespoons of butter
  • cheese sprinkles. You could even use parmesan cheese

You could easily make this popcorn in an air popper or over the stove old school.

1. Heat oil in pan. To test if the oil is ready, place a couple of kernals at bottom and wait until they pop.

2. Add the kernels to the hot oil and stir with a wooden spoon. Make sure you coat all of the kernels with your oil.

3. Place lid on pot and let heat up for a minute. Once a couple of kernels start to pop, move your pot over your heat to keep it moving. Remember those foil tins that came with a handle that you could shake over your burner or camp fire and it balloons up with the popcorn inside? Just like that

4. As soon as you do not hear kernels popping, remove from heat.  In the microwave melt 2-4 tablespoons of butter depending on how buttery you like your popcorn. Pour the butter over popcorn making sure to get butter over all kernels by using a spoon.

5. Quickly shake cheese sprinkles over popcorn, using spoon to make sure you get as many kernels coated as possible. Enjoy!

Kettle Corn

  • 1/3 cup oil
  • 1/2 cup sugar
  • 1/2 cup popcorn kernels
  • salt to taste

It is important that you make sure you large pot as a lid to contain the popcorn within.

1. Heat oil in pan. To test if the oil is ready, place a couple of kernals at bottom and wait until they pop.

2. Add the kernels and sugar to the hot oil and stir with a wooden spoon. Make sure you coat all of the kernels with your oil and sugar.

3. Take your pot and shake it over the heat and then move it away and repeat. 

4. As soon as you do not hear kernels popping, remove from heat and pour popcorn on a cookie sheet or wax paper to cool. Try to resist the deliciousness for a couple of minutes as the popcorn will be SUPER hot and could burn your mouth.

Please use EXTREME caution when handling the cooked popcorn. The sugar makes it very hot and you could get burned!
