Operation Wedding Reception Dessert… Almond Bars

Time for another dessert that will be at our reception! So far on the list we have Oreo cheesecake bars, brown butter strawberry banana bread and now almond bars!

Now don’t worry, as I mentioned in Super Saturday, I haven’t broken my rule of not making “sweet treats” this week.  I actually made these last week, just haven’t had time to post about them. They are one of Jake’s favorite “sweet-treats” and super easy to make. Not to mention, mouth-watering delicious.

Almond Bars

This recipe comes from a family friend of Jake’s,  Sheila Madsen.

In a large saucepan, boil

  • 1 cup butter
  • 1 cup water

Remove from heat and using a wooden spoon add:

  • 2 cups flour
  • 2 cups sugar
  • 1 tsp salt
  • 1 tsp soda
  • 2 beaten eggs
  • ½ cup sour cream
  • 1 tsp almond extract

Be sure to do this in the order given because you don’t want to add the eggs until the mixture has cooled.  The consistency will be rather strange, but just keep stirring until well blended.

Pour into a greased jelly roll pan and bake at 375° for 18-20 minutes.

Frosting –make this while the bars are baking:

In a medium saucepan, boil:

  • ½ cup butter
  • ¼ cup milk

Remove from heat and add:

  • 4½ cups powder sugar
  • ½ tsp almond extract

Stir together and spread on warm bars.  Sprinkle with 1 cup of slivered almonds.

Store in the refrigerator.

This recipe can be easily halved, which is typically how I make them for home. Just be sure to bake in a 13 x 9 pan or even 8 x 8 pan. Cooking time will be the same.
