Whole Wheat Strawberry Muffins

Whole Wheat Strawberry Muffins

Ingredients:

  • 1 cup flour
  • 1 cup whole wheat flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 eggs
  • 6 ounces strawberry yogurt
  • 1/2 cup packed brown sugar
  • 3 tablespoons melted butter
  • 1 teaspoon vanilla
  • 1 cup roughly chopped strawberries

Directions:

In a large bowl combine flours, baking soda, baking powder, salt, nutmeg and cinnamon together.

In a medium bowl whisk together eggs, yogurt, vanilla, brown sugar, and butter.

Combine wet with dry ingredients. The batter will be lumpy, which is perfect. Be sure not to overmix.

Fold in chopped strawberries.

Spoon batter into lightly greased or lined muffin pan.

Bake in 400 degree oven for 15 minutes or until inserted toothpick comes out clean.

  1. These strawberry muffins were amazing! Such a great flavor the spices lend to the bread. My lil ones gobbled these up, whole wheat and all!

  2. One word…YUM! Used thawed frozen strawberries and dried them with paper towels. Do you have est of calorie count? just wondering in case i eat 3 at a time like i did last time i made them.
